Day #3 kiddos christmas vacation...with ham & cheese muffins....

was up early this morning being the "good wife". hubby requested that i made ham and cheese muffins for his potluck today and i agreed. but being the perfectionest that i am i couldnt make them last night and put them in the fridge...they wouldnt be "fresh". last night i chopped up the ham and green onions needed ...one less thing to do in the morning. dont get me wrong...these muffins are great even after being in the fridge for days...but they are the best warm out of the oven...just like cookies are. (sharing the recipe below...woohoo!)

anyway....so i was up early making muffins this morning for hubby. got kiddo up after they were done and then hubby. me and kiddo had to hit the store again today cuz of the things i forgot yesterday and a few other things i felt i need this weekend.

once again while we were out we got a notice for a parcel. now i have to head back to the store again after noon time to pick it up. its going to be crazy at the store later today and im not happy about this. oh well....its for kiddo...it could be from one of two different people left that we havent recieved something from.

hubby gets off work today sometime after noon so we will head to the store then and have him run in so i dont have to find a parking spot. then we are off to the meat shop to pick up his mom some "potted meat" for when she is here. i dont care much for it and im not even sure whats in it other then meat...lol all i know is she really likes it and i thought it would be nice for her to have while she is here for lunch or whatever.

finished half of my to do list yesterday. just have to vaccuum the house, mop, laundry and dust. thats all....lol then its off to work i go tonight for a few hours then im off for the weekend! wohoo.

here's the recipe for the ham and cheese muffins:

3 cups Bisquick
2 eggs
1 cup milk
3 Tbs veg. oil
1 cup ham -diced small
1 cup cheese -shredded
1 or 2 green onions (scallions) -chopped (OPTIONAL)

-preheat oven 400 degrees
-spray bottoms and sides of muffin tin
-beat eggs slightly in bowl
-stir in bisquick, milk, and oil just until moistened
-stir in ham and 3/4 cup of the shredded cheese
-divide batter evenly among 12-16 muffin cups (i make 16)
-sprinkle remaining cheese over tops
-bake 18-20 minutes or until slightly brown
-immediately remove from pan and cool.
