Christmas Eve Day....and a recipe

If it wasnt the day before christmas i would say today is some shitty day! and i do mean shitty. here's why....last night (and the past few nights) i got all of about 2 hours sleep cuz of my knee bothering me again and just not being able to sleep. so last night i decided to hit the couch about 330am to see if change of local would help...NOPE.

so im up at 715am to get going for the day....take hubby to work for his short day today (off at noon'ish)....come home ...eat something (right now) while i read blogs, etc....then get the kiddo up and ready to head out to Zellers for one last thing i forgot(they open at 9am). I never shop on christmas eve day....NEVER...i guess thats changed now too...lol

back home we go after shopping...have to bake cookies with kiddo so Santa has something tonight to take with him after he drops his load *giggle*. then i have to try and get "some" wrapping done before i have to get hubby from work.

then as soon as i pick him up...im off to work myself. yes thats right...im off to do my mandatory shift of work on christmas eve day. i dont mind it so much really...everybody has to work today at my work...either morning shift or afternoon shift. so today....im in from 1-5pm...not so bad ...its only 4 hours.

thennnnnn......when i get home...maybe a shower to relax a bit...watch some tv...and then dinner. nothing special on menu...just some ham with potatoes...then some chips and dip later with a few "drinkssssssss".

one more thing to do after kiddo goes to bed....wrap...wrap and wrap gifts! then we let santa do his job.

our rule for morning (since i havent slept much lately)....when she awakes ..she can get her stocking and go through all that in her room...then at 8am she can come in and wake us...which im sure we well be up anyways listening to her :) (im such a mom) ....lol

OHH.....ONE MORE THING I WANT TO SHARE WITH YOU (i know its a long post..sorry)
i make these often and yesterday i made 2 batches ...they are sooo yummy and easy to make.

Ham and Cheese Muffins

2 eggs
3 cups Bisquick
1 cup Milk
3 Tablespoons oil (canola or veg.)
1 cup shredded cheese (any flavor you prefer)
3/4 cup chopped Ham
1 chopped green onion (optional)

-------------------------------------------
pre-heat oven 400 degrees
spray bottoms and sides of muffin tin cups
-------------------------------------------

-beat eggs slightly in mixing bowl
-stir in bisquick, milk and oil just until moistened
-stir in ham and 3/4 cup of the cheese (and onion)
-divide batter evenly among 12 muffin cups
-sprinkle remaining cheese over tops

-bake 15-20 minutes (ovens vary greatly) or until slightly brown.

-immediately remove from pan and enjoy.
